PR-OATS – Overnight Protein Oats

Looking for a quick breakfast in the morning?  Trying to add MORE protein in your day? Try making PROTEIN OATS – or as I like to call them “PR-OATS”. Super easy to make them in the morning before you leave for the day. Too busy in the morning? Make it at night and leave it in the fridge overnight.

The real magic is in how you choose to ‘TOP’ them.

My personal favorite – “Peanut Butter and Jelly” where I top it with a tablespoon of peanut butter and mix in a variety of berries. No fresh berries? Opt for some low sugar/sugar free jelly!

You can also try more of a ‘savory’ way by adding an over easy egg, a slice of turkey bacon and some sauteed veggies or squash. Dash it with some cinnamon and you are set!

I enjoy it both ways. It really just depends on if I am looking for a sweet or savory breakfast.

As long as you think of the oats as the base, the topping possibilities are endless.

Old Fashioned Oats [I used Quaker or Bob’s Mill] – 60g or 2/3 cup
Liquid Egg Whites – 100g or ½ cup
Water – ¼ cup

Step 1:
Combine all the ingredients in a bowl and stir.

Step 2:
Place in the microwave for 30 second intervals. Every 30 seconds, stop, take it out and stir a few times. It should take about 3-4 intervals before it is ready. You will notice that it will thicken up and increase in volume!

*ProTip – start with a bigger bowl than you think – since it expands, it may spill out while being nuked.

Step 3:
Top it with all your goodies!

Some options for toppings:

Nut Butters:
Peanut Butter
Almond Butter
Cashew Butter
Peanut Butter Powder (PB2)

Fruit – Frozen or Fresh

More Protein:

Protein Powder (chocolate or vanilla)
Turkey Bacon
Turkey Sausage
Chicken Sausage
Over-Easy Egg

Bok Choy
